A few mornings ago, I woke up with a craving for Chana Masala. Unfortunately, I had only dry chickpeas and lacked the patience to soak them. The oatmeal that I decided to make instead turned out delicious and surprisingly similar to Chana Masala. The best part? It took all of 10 minutes.
Here’s how I made it:
- First, I began to make a serving of old fashioned whole grain oats.
- When the oats were a minute or two away from being done, I added 3 tablespoons of tomato sauce, 1/2 tablespoon of coconut oil, and 1/2 teaspoon of a 7 spice blend* that included all spice, cinnamon, cloves, cumin, coriander, caraway, and nutmeg.
- In a separate pan, I sauteed 1/4 of a yellow onion.
- When both the onion and the oatmeal were ready, I topped the oatmeal with the onion and then ate my tasty creation.
