Indian-Spiced Oatmeal & a Giveaway Winner

Indian-Spiced Oatmeal

A few mornings ago, I woke up with a craving for Chana Masala. Unfortunately, I had only dry chickpeas and lacked the patience to soak them. The oatmeal that I decided to make instead turned out delicious and surprisingly similar to Chana Masala. The best part? It took all of 10 minutes.

Here’s how I made it:

  • First, I began to make a serving of old fashioned whole grain oats.
  • When the oats were a minute or two away from being done, I added 3 tablespoons of tomato sauce, 1/2 tablespoon of coconut oil, and 1/2 teaspoon of a 7 spice blend* that included all spice, cinnamon, cloves, cumin, coriander, caraway, and nutmeg.
  • In a separate pan, I sauteed 1/4 of a yellow onion.
  • When both the onion and the oatmeal were ready, I topped the oatmeal with the onion and then ate my tasty creation.
*To me, the 7 spice blend tastes a lot like garam masala. If you’re not lucky enough to find the latter (which I think we picked up at a Greek restaurant that had a store attached to it in New Orleans), then you can probably find the former at any ol’ grocery store near you.
